K&M is a good book for learning about EBs and as Arne mentioned, has
all the math in there. (Mind you, I wrote some of the sections in it so
I have a slightly biased view.)

Hilditch's book is also a good one and definitely worth reading. It's
well-written and Ron is well-versed in the wide variety of the EB
family.

For data analysis you should look at R.E. (Bob) Wilson's papers. He is
the author of the Wilson-Devinney analysis code. Here are some of them:
