Stopping down the lens seems like a waste of photons.  Yes I can
see where it would keep bright stars for saturating but using
a shorter exposure on the I-band camera would do the same thing

It would be great if you could take two I-band exposures for
each V-band.  I've forgotton the readout time and where the
bottleneck is (ADC, ISA bus, ...) but if possible a 2 to 1 
exposure ratio would let you put to use all the light that
falls down on the lens.
