Tom,

Do you know abut "control scroll wheel"?  It magnifies the screen.
It can get really huge with only four characters filling the entire
screen.  The feature is designed for people with poor eyesight.
But not as much fits on the screen but then they make 30"
LCD monitors too

Terminas and ssh work like on Linux.  You have a chose f
a couple terminal programs.  One uses X11 one does not.
The latter is the best one to run ssh from

Also there is VNC with which you can export the entire
Linux desktop to your Mac.  I do this and it works exactly
like you are using the Linux system except slower

It seems that there are a couple gnuplt ports to the mac
using either X11 or the native Aqua graphic system..

But Mac OSX comes with "grapher" that ispretty easy
to use for simple graphs

The trouble with Apple notebooks is that there are only three
to choose from.  The lowest price one has a small screen.
if your eyesight is bad you may not like the 13" wide format
screen.  They make a 17" notebook too.  It's huge and
expensive

As for multiple desktops, this is currently a third party add on
for the Mac but soon (end of March we think)
Apple will release the newer version of Mac OSX which will have
multiple desktops built-in  It will also have some
better features for people with poor eyesight -" resolution
independence" they call it.   This is all on the Apple web site

The advantage o using Linux is that you have nearly infinite
hardware options so you can likely find some $600 notebook
that will do the job.  Apple ignore the low end of the market
so you have to over buy a bit  Apple has three notebooks one
"consumer level" and two "pro level"
